Infectious diseases are and remain a significant concern. In the United States, around 76 million cases of food-borne illnesses are estimated to occur each year, resulting in approximately 325,000 hospitalizations and 5,000 deaths. Globally, it is reported that, in 2005 alone, 1.8 million people died from diarrheal diseases, with most of these cases attributed to contaminated food and drinking water. Food contamination creates an enormous social and economic burden on communities as well as their health systems.
