FLAIR-FLOW: Communicating Food Freezing Research Results to Food Companies

The FLAIR-FLOW information system operates in 24 European countries. Its goal is to disseminate results from EU, and also aspects of nationally supported, food R&D to food companies, health professionals and consumer groups. The FLAIR-FLOW project is led by Jean-Francois Quillien (criaa@rennes.inra.fr and the project website is www.flair-flow.com. Dissemination of results is achieved via one-page technical documents, via synthetic reports and by workshops. The RETUER (ready-to-use-European research) workshops on the cold chain are a major focus. Emphasis is on results from ongoing and recently completed R&D projects and the material presented includes managing the cold chain, the effects of fluctuating temperatures below the freezing point on product quality, freeze-chill technology, and the use of cryoprotectants for maintaining quality in frozen minced products. The FLAIR FLOW project personnel engage in extensive dialogue with end-users via a series of questionnaire surveys to food companies on RTD and related issues, and also via a series of 72 structured debates between scientists/experts and the three groups of end-users (i.e. food companies, health professionals, and consumer groups).
