Advanced Application of Terahertz Time-domain Spectral Technique for In-situ monitoring of Microwave Vacuum Dehydration

Abstract. An intelligent dehydration system was built by integrating a Terahertz time-domain spectroscopy (THz-TDS) system with a microwave vacuum dehydration (MVD) system to achieve in-situ monitoring of the moisture content (MC) in beef slices during dehydration processes. The THz-TDS technique was applied to capture the dynamic time-domain spectra of vapor content within the MVD system by penetrating a polyethylene air hose. Multivariate analyses, including support vector regression, Gaussian process regression, and ensemble, were applied to establish MC prediction models based on the spectral absorption coefficients of the vapor exhausted from dehydration desiccator. The established ensemble regression model obtained the highest prediction performance with R2p of 0.91 and RMSEp of 0.04744. The results reveal that the THz-TDS technique is able to sense the dynamic vapor content within the MVD system by penetrating a polyethylene air hose, and it shows great potential to be integrated into the MVD system to achieve in-situ MC evaluation of food dehydration processes.
