Effect of Conventional Heat and Microwave Pasteurization on Rheological Behavior of Lycopene Nanoemulsion

Abstract. Rheological properties can provide analytical tools to yield meaningful insight into the structural organization of food. Owing to the health benefits provided by fruit juice, the fortification of bioactive compounds in an encapsulated form has attracted advanced researcher‘s attention to improve the bioavailability of bioactive compounds. Moreover, processing (CH&MP) can weaken the perceptive behavior of fruit juices, thus hamper the bioavailability of bioactive compounds in the human GIT. Hence, the objective of this study was to determine the effect of processing (CH and MP) on the rheological behavior of lycopene nanoemulsion. Methods: Lycopene nanoparticles synthesized in Polylactic acid were fortified in two (5o and 15o Brix) different types of artificial fruit flavored juice. The six different treatment groups were developed based on the concentration of lycopene (10, 20, 40mg/100mL of acetone) used in fruit juice of 5 and 150 Brix. Rheological and physical behavior was measured using Brooks Field Rheometer, colorimeter, handheld refractometer, and pH meter followed by CH and MP treatment. Six model fitness tests were investigated, and data were analyzed to predict the effect identification followed by CH (60oC for 30 min) and MP treatment (100 s at 800W). Results: Results suggested that the Casson and NCA/CMA Casson model (fitness ranged from 82.0±2.52 to 90.5±2.52%) best explaining the behavior of at all treatment between the shear rate of 40-230s-1. Based on the Casson model, apparent viscosity (Range of 0.140 to 5.59±0.11 mPas) significantly (P <0.05) varies with different treatment groups. Apparent viscosity had changed from 6.73±0.11 mPas to 7.17±0.11, 4.21±0.11, and 3.67±0.11 mPas at different formulations.(Download PDF) (Export to EndNotes)
