Effect of different temperature and humidity stress combined with steaming on the quality of Poria cocos peel

Abstract.

To explore the effect of stress sweating combined steaming process on the quality of Poria cocos peel under different temperature and humidity conditions, and to determine the optimal process parameters. The experiment set up three gradients of stress temperature 25℃, 30℃and 35℃, three gradients of stress relative humidity 75%, 85% and 95%, and three gradients of stress time 24, 36 and 48h. under the control of temperature and humidity, Poria cocos peel was subjected to stress sweating, and then steamed for3h. The effects of stress sweating combined with steaming process on the contents of extracts, polysaccharides and total triterpenes of Poria cocos peel under different temperature and humidity conditions were compared, The results were compared with those of steaming for 3 h. Results: the contents of extracts, water-soluble polysaccharides and total triterpenoids of Poria cocos peel in 10 treatment groups were significantly different (P < 0.05), and the contents of extracts, water-soluble polysaccharides and total triterpenoids of Poria cocos peel reached the highest after steaming for 3 hours at 30 ℃ and 85% RH for 24 hours. Conclusion: under different temperature and humidity conditions, stress sweating combined with steaming process has obvious influence on the contents of extract, water-soluble polysaccharide and total triterpenoids in Poria cocos peel. Combined with the production needs, it is suggested that Poria cocos peel should be treated at 30 ℃ and 85% relative humidity for 24 hours and steamed for 3 hours.
