Juice extraction tests previously reported by (Lefebvre, Khelifi, & DeLadurantaye, 2016) showed that although similar treatments were applied to sweet sorghum biomass, significant differences between extraction rates were observed. On the other hand, final moisture content were not significantly different, suggesting that the final moisture content would be function of the applied pressure and pressing time, making it a better tool to predict juice extraction rates. To validate this assumption, a prototype press previously built was thoroughly instrumented. This allowed getting valuable data on the pressure applied on the biomass and the masses of the biomass and the juice. The data were used to model the final moisture content with regard to the pressure applied. Such a model is meant to be used to optimize juice extraction in juice extracting piston presses.
