The Differences of Mycotoxins Content and Physical Properties Between Healthy and Moldy Corn Kernels

Abstract. Corn and other corn deep processing products or by-products were widely used in feed industry as a high-quality feed resource. However, the existing corn products were commonly contaminated by mycotoxins. Therefore, in order to understand the properties of corn grain for physical detoxification method, the healthy and moldy corn kernels were selected by hand in this study; the enzyme-linked immunosorbent assay (ELISA) method was used to measure the mycotoxins content of healthy and moldy corn kernels; the color parameters and chromatic aberration parameters of corn kernels at the position of germ were measured by a spectrophotometer, and the differences in the size, shape and density of the corn kernels were also compared. The results showed that: the content of aflatoxin B1 and zearalenone in moldy kernels was significantly higher than that of healthy kernels, and there were significant differences in the physical properties of healthy and moldy kernels (P<0.01). The averages for L*, a*, b* , ΔE* value were 75.948, 2.279, 23.236, and 30.322 for healthy kernels, and 61.994, 5.568, 23.583, and 41.566 for moldy kernels. And there were statistically significant differences between healthy and moldy corn kernels in major diameter, intermediate diameter, minor diameter, sphericity, and density. By comparing the mycotoxins content and physical properties of healthy and moldy corn kernels, this study provided the basis for the screening, optical sorting, flotation and other physical detoxification methods of corn grains.
