Water-injected detecting method research based on relative value of water content of beef

Abstract. Water-injected beef is always a serious threat in food safety in China, meanwhile, detecting technology has not been solved in actually for a long time, in this paper, some samples has been used for testing water-injected beef based on a novel measurement. Meanwhile, there are different water states in beef include capillary water, the bulk water, the entrapped water and so on. Then the percentages of all kinds of water content could be obtained according to the National Standards and some other custom methods that implied by China National Standards. Aiming for the interval estimation, these water content data was deduced in the Statistical principle, and was confirmed by the slant degree test in the normal distribution condition at the level of significance equal to 0.05(α=0.05).Furthermore, the Interval estimation results constructing a scope for comparison between high qualities beef with water-injected beef. At last, the novel method is better than the common ones which had dependence on water-injected samples, avoided effective the interruption about the testing result.
