Analysis of pasting properties of different maize cultivars used as feed ingredient

Abstract.
. In order to study the pasting properties of maize used as feed ingredient, grain samples of 12 diverse maize cultivar were collected, the bulk density , moisture content and starch content of maize grain were measured and all maize samples were ground and passed through 1.5 mm and 2.0 mm screens to obtain maize meal of different grinding particle sizes. Then RVA pasting property parameters including peak viscosity(PV), trough viscosity(TV), breakdown viscosity(BV), final viscosity(FV), setback viscosity(SV) and pasting temperature were determined, and difference significance and correlations of physicochemical properties mentioned above among maize cultivars were analyzed. The results indicated that, there were significant diversities in different maize cultivars for bulk density, starch content and grinding particle size for different degree. The range of PV, TV, BV, FV, SV of maize meal samples ground and passed through a 1.5 mm screen were 641.00~1419.00 cP, 543.00~1160.50 cP , 48.00~258.50 cP , 1608.00~2714.50 cP, 820.00~1601.50 cP, respectively, and a 2.0 mm screen were 568.00~1263.00cp, 497.50~1079.00cp, 31.00~191.50cp, 1252.50~2238.50cp, 755.00~1159.50cp, respectively. Considered the whole varieties of maize, each viscosity parameter value of maize samples ground and passed through a 1.5 mm screen exceeded the corresponding value by 2.0mm. Besides, pasting temperature of maize samples lies in the range of 78.30~87.65℃. The correlation analysis revealed that viscosity properties had significant positive correlation with each other except for BV and SV. Bulk density was negatively correlated with PV, and significantly negatively correlated with BV, and significantly positively correlated with pasting temperature. TV and FV presented positive correlation with starch content. Each viscosity parameter was significantly negatively correlated with grinding particle size, however pasting temperature was significantly positively correlated with grinding particle size. Furthermore, there was a significant positive correlation between bulk density and grinding particle size. The data of grinding particle size and RVA pasting properties of maize contained in the present paper provided theoretical reference for optimization of processing parameters in grinding, conditioning and pelleting.
