Effect of Mechanical Treatments on Creep Behavior of Potato Tubers

Abstract. A common chipping variety of potato tubers was selected to stimulate the effect of surface, drop height, tuber weight on the creep behavior of tubers. Some experiments were conducted in cooperation with a multi international company local branch farm in which provided the raw materials along with the instrumented sphere (Impact Recording Device) which was used to test the features of the impact of tubers against some selected surfaces. Some physical characteristics of potato tubers were measured including: tuber weight, dimensions, volume, particle density, bulk density, cross section roundness, sphere city and moisture content. Texture rheological model of fresh potato tubers were estimated by direct measurements. The coefficient of restitution was calculated and then the absorbed energy was estimated. Drop test was conducted in order to study the effect of tuber free falling on the constants of Burger rheological model. Creep results showed that there is a non-linear regression relationship between the absorbed energy and the constants of Burger rheological model, the regression equations between the absorbed energy and the constants of Burger rheological model showed that the logarithmic model was the best fit, with a determination coefficient, r2, ranges from 0.5 to 0.9.
