In this research, an automated supervision and control system was developed for the batch process of rice wine fermentation. The system was developed based on an analysis of the process structure and functionalities as well as different control strategies. It consisted of three layers: process monitoring, process control, and process management. Labview, PLCs, and industrial control computers were used to implement the system. The developed system was installed in several Chinese rice wine plants. Its application revealed that it can not only save energy and labor but also improve product quality consistency.
