ABSTRACT POPCORN has been hand shelled and dried under fully-exposed conditions. Results show popcorn ex-pansion volume decreasing with an increase in harvest moisture content and/or drying air temperature. Expan-sion volume was also found to be related to the degree of stress cracking, popping moisture content and the prior moisture history of the popcorn.
