Performance Evaluation of a Small Scale Cassava Chips dryer

Performance evaluation test of an electrically operated Chip Dryer was carried out to investigate the effect of quantity of drying, drying temperature and drying time on the rate of drying of fresh Cassava Chips at 66.7% moisture content (dry basis). The data from the test subjected to the statistical analysis of variance (ANOVA) and Duncan Multiple Range Test (DMRT) were used to compare the values. Result of the statistical analysis of variance shows that quantity of drying, drying temperature and drying time is significant at 95% confidence level. Quantity, drying time and temperature, drying time interactions were significant while quantity, temperature, drying time were not significant at 95% confidence level. Drying rate increases as the quantity of drying increases while it decreases with increase in drying temperature and drying time. This evaluation shows that the dryer can be used for small scale drying of Cassava chips.
