A study was conducted on the potentials and benefits of increasing the production of lentils. Findings show that the immense potential of lentils has resulted in increase demand and also boosted the opportunities in lentil production. In addition, economic importance of lentils was highlighted to further underscore the need for increased production and acceptability. Furthermore, lentil option for meeting the environmental challenge was indicated and explained. The influence of storage condition on the processing quality of lentils was presented together with valuable information on its physical properties, chemical composition, milling and cooking quality.
