Electronic nose have been used as intelligent sensors for maintaining the quality and safety of various types of food products. This paper focuses on the evaluation of a commercial electronic nose (Cyranose 320TM) for sensing indicator compounds associated with spoiled beef. Universal gas sensing and characterization system has been used perform the experimental analysis.
