Physical Characteristics of green Rice for Blanching and Consideration on Development of Mechanical Steam Blanching System

Green rice is a product of paddy rice that is harvested at between milk life and yellow life stage (immature rice) and processed with a sequential procedure as blanching, drying, and hulling. With such processing rice was tinged with green color, and this research named such rice as green rice. Physical characteristics of the immature rice such as heat capacity, thermal conductivity, density, and moisture content of immature rice were analyzed, and possibility of a mechanical steam blanching with immature rice was evaluated. Also, major influencing factors were considered to develop a mechanical steam blanching system to product green rice.
