Browning Substrates in Agaricus Bisporus

The main browning substrates in Agaricus bisporus (F56, the main breed widely planted in China) were studied by high-pressure liquid chromatography (HPLC) and UV-absorption spectrums in this paper. The results showed that there were many kinds of polyphenols in Agaricus bisporus, in which the content of tyrosine was the highest, reached to 0.503mg.g-1FW and the content of tyrosine decreased quickly with the increasing of browning degree during storage. The UV-absorption spectrums of standard tyrosine sample, the products of tyrosine reacting to PPO from Agaricus bisporus and the native browning products in Agaricus bisporus were compared. The result showed that the absorption peak of the products of tyrosine reacting to PPO from Agaricus bisporus and the native browning products in Agaricus bisporus appeared at 240nm, but the absorption peak of standard tyrosine sample appeared at 320nm. So, tyrosine was proved the main browning substance in Agaricus bisporus.
