The need to ensure safe food products has given room for the development of taste sensors that can surpass human abilities by quantifying the analytes. Artificial taste sensors, also known as electronic tongue, are multichannel taste sensors composed of lipid polymer membrane for the transformation of tastants into electric signals, which are entered into a computer. These sensors, unlike human beings, can mimic and quantify the tastants. The Electronic tongue is being widely employed for the analysis of different types of analytes because of its high sensitivity, stability and high selectivity.
