One factor that can compromise animal welfare in the broiler chicken industry is the varying temperature and water vapour gradients in transport vehicles. To uphold ideal transport conditions for broilers, it is essential to identify the environmental conditions that do not cause stress and the conditions that could potentially instigate stress. Previous studies in this area used physiological responses to determine the onset and severity of stress when broiler chickens were exposed to differing warm-hot temperature and water vapour gradients. The purpose of this paper is to review the various enclosed systems that have been used to study and monitor physiological responses. This review will aid in constructing a system which can be used to determine the onset and impact of stress to broiler chickens in cold temperature environments, complementing previous studies in warm environments, and enable the entire range of temperature and water vapour combinations to be assessed for broiler chicken welfare.
