This chapter outlines how IT is used after harvest and during further processing of agricultural products. Different techniques for advanced planning and scheduling, including MRP2 and more recent techniques based on process models, will be explained and illustrated with an example. Further, it will be shown how process control systems have evolved towards Management Execution Systems (MES), which often also include quality control software covering Hazard Analysis Critical Control Points (HACCP). They are nowadays combined into true Enterprise Resources Planning (ERP) systems that operate at the management level of the company. Advanced simulation software such as Computational Fluid Dynamics (CFD) is also available nowadays for optimizing the design of postharvest and food processes.
