Analysis of Edible Oil Quality Characteristics Tested on Electronic Tongue System

Traditional oil quality control uses gas or liquid chromatograph! The aim of this study was to discriminate the taste of several important edible oils and discriminate various concentration mixtures of edible oils by the Alpha Astree electronic tongue. The electronic tongue instrument is able to analyze taste and dissolved organic and inorganic chemicals that are typically found in liquids.

The results proved the reproducibility of the measurements and the accuracy of the instrument during oil measurements. Significant differences were shown between the different types of edible oils. Oil mixtures could be discriminated well from the reference at low concentrations.
