A model was developed to accurately describe the heat transfer within a segmented-flow
aseptic system for processing a synthetic food comprised of xanthan and spherical food particles.
From this model, the cumulative microbial lethality can be estimated.
A segmented-flow aseptic processing system can produce shelf-stable foods containing particulates
that are of high quality. This is possible due to the smaller residence time distribution than pipe-flow
aseptic processing and better heat transfer than canning, allowing foods to be processed only as
long as needed to achieve the proper microbiological lethality, and not overcooking the food.
