In order to reduce the spatial variability and control the taste of rice, variable rate fertilizer application is applied. It is difficult to have maintenance of mutual prosperity with grain yield and taste of rice. Variable rate fertilizer application is experimentally applied to control the spatial variability of grain yield and taste of rice. The amounts of protein, applied 20kgNK/ha at the variable rate fertilizer application section, are comparatively less than the other plots. The mean value and CV (coefficient of variability) are 6.97 t/ha, 4.75% at uniform fertilizer application section and 6.93 t/ha, 5.34% at variable rate fertilizer application section. It is partially possible to control the amount of protein depending on the variable rate fertilizer application. It is, however, difficult to control the taste of rice using the variable rate fertilizer application. Because the taste of rice depends on not only protein but also amylose, fatty acid and moisture content.
