Development of a Drying Process for Optimum Production of Red GinsengPublished by the American Society of Agricultural and Biological Engineers, St. Joseph, Michigan www.asabe.org Citation: Paper number 026162, 2002 ASAE Annual Meeting . (doi: 10.13031/2013.11240) @2002Authors: D. I. Chang, S. H. Bahng, H. Y. Kang, K. S. Chang Keywords: Red ginseng, Yield rate, Drying system, Optimum production The average yield rate of the top quality red ginseng, the Heaven and Earth Grade(H&EG) is 8.63% that is manufactured by the custom method. In order to increase the yield rate of H&EG red ginseng, a rotating-type drying system was designed and tested. Then a manufacturing process was developed and its performance was tested. The developed drying system is an automatic and optimum system for manufacturing the top quality red ginseng. The performance test results of the process developed showed the average yield rate of H&EG red ginseng is 18.8%. The statistical analysis of these results showed that the 95% confidential interval of yield rate were 14.1%-23.7%.Therefore, the optimum process for producing top quality red ginseng was developed satisfactorily in this study.
